My Meal Plan: July 26th – August 1st

This morning I sketched out a meal plan before heading to the gym. I looked it over as I ate my Morningstar Spicy Black Bean Veggie Burger topped with avocado and roasted red pepper for lunch. Before I make my list and head out the door to shop for the week ahead, I thought I’d take a moment to share it with 40 Fit N’ Stylish readers. Maybe it’ll save you some meal planning time.

A few notes about this week’s meal plan:

We have a full house this week. Chris and me plus three. We’re having guests stay over on Friday night too (plus two more).  Our week will be full of fun. Also, it’s Chris’s birthday on Wednesday! So this week will be a little more sweet than most (thank goodness for teenagers being around to eat up the most tempting treats).

When it comes to breakfast and lunch, I make my own and make sure Chris has what he likes available to make his. Last summer we tested out a kids’ summer grocery budget. Instead of me guessing what they might like for breakfasts and lunches, Chris takes his teens out shopping. They each receive a set amount of cash to buy their breakfasts, lunches, and snacks with for the week. They seem to enjoy the independence. I like the time and guesswork that it saves me. Also, it’s been fun to watch their choices evolve over the past two summers. They’re getting wiser.

Even with the best plans, something tends to come up. It’s about preparation, not perfection.

This Week’s Meal Plan:

Friday, July 26th 

Breakfast: Pumpkin Walnut Baked French Toast with Maple Coffee

I want to test this recipe out as I might make it for the guests we have staying over on Friday night. Since I haven’t ever made it before, I want to make sure it’s as delish as I think it’ll be. If it’s not, I’ll be able to scrap the plan before Saturday morning arrives. 

Lunch: Lentil Detox Soup, Salad, and Mimosas. Or, potentially some of the appetizers I plan to make for Friday night. The amazing Michelle Hilsman is stopping over and we have decided we should treat ourselves!

Dinner: Burgers and wings on the grill with all the fixings. I also plan to make Roasted Garlic White Bean Spinach Dip and Avocado Lime Deviled Eggs by Tasting Page. Broccoli slaw with sesame dressing and some chips will be on the menu too. 

Saturday, July 27th

Breakfast: Raspberry Almond Muffins, Breakfast Blueberry Oatmeal Cakes and a variation on this Paleo Sausage Egg Breakfast Bake. Maybe the French Toast if it turns out like I hope it will. 

Lunch: Better-for-me Monte Cristos. I love Monte Cristo sandwiches, especially when they’re full of sugar and fat, but this girl’s got goals. There’s a dress I need to be ready to look amazing in.

Dinner: Instant Pot Hawaiian Chicken Tacos. Everyone at our house seemed to really like these the last time I made them, so…I shall try it again.

Sunday, July 28th

Breakfast: Something from the bounty of muffins and breads made before. There is a Spiced Plum Bread that I might make before today (Thursday) is done. 

Lunch: Detox Soup / Rachel Sandwich. I just realized that I need to share my Rachel Sandwich recipe! I will put it together and take some pics before the week is through. Basically, it’s a Reuben with turkey instead of corned beef. I love ’em. 

Dinner: Fit Men Cook’s Orange Chicken Fried Rice

Snack: Veggies and Hummus, Paqui Chips and Guac

Monday, July 29th 

Breakfast: Blueberry Oatcakes / Almond Raspberry Muffins

Lunch: Detox Soup / Rachel Sandwich

Dinner: Date Night. 

Snack: Apple and Almond Butter

Tuesday, July 30th 

Breakfast: Blueberry Oatcakes / Almond Raspberry Muffins

Lunch: Texas Chicken Chili There are a few modifications I make to this recipe. One it calls for bison, or turkey. I like chicken, so I use chicken. Two, the beans. I use chili and dark red kidney beans. Otherwise I follow it pretty close.  

Dinner: Cauliflower Risotto with Chicken French (made a bit healthier than most recipes). Once I actually make the Chicken French I’ll share the recipe, so long as it turns out

Wednesday, July 31st

Breakfast: Avocado Toast with a fried egg

Lunch: Chili / Rachel Sandwich

We will be out celebrating Chris’s birthday. No dinner plan needed and I can’t share all of my treat secrets on this one.

Thursday, August 1st

Breakfast: Blueberry Oatcakes / Almond Raspberry Muffins

Lunch: Chili / Rachel Sandwich

Dinner: Stir Fry with Cauliflower Rice. This will help me use up any veggies that go unused before they go bad.
