My notes: I made this for 5 people, so I doubled the recipe. However, I really didn’t need to double the sesame seeds and panko breadcrumbs because there was plenty left over after I’d rolled all of the chicken tenders in the mix. When I make it again, I’ll go with the original amount of sesame seed and panko breadcrumbs mix. Then, mix together more if needed.

What’s to love about this recipe: Making these is way easier than dredging chicken through eggs, flour, and then breadcrumbs. Chicken still tastes great when reheated in the oven the next day. We are picky chicken people in our house.

My notes: This soup often becomes my lunch for the week and sometimes I’ll share a cup, or two with my guy. For the onion in the recipe I substituted leeks for the onions this past week when I made it, because they are more nutrient dense. I especially like that leeks are a good source of iron and bone strengthening manganese.

What’s to love about this recipe: Beyond it looking like spring when Minnesota’s spring chooses to hide beneath a blanket of snow, it’s warm, has a complex flavor and a kick of spice. It’s satisfying like a cream based soup without the cream and flour.  I like to make it on Sundays and have it as lunch for the week.

  • My notes: The only switch I did with this recipe was using the rolled oats that I had on hand instead of gluten free ones. To the best of my knowledge I do not have any sort of gluten allergy. It didn’t seem worth it to make an extra trip to the store. I did (as the recipe suggested I could) mash up a few slices of banana into the optional cinnamon streusel.What’s to love about this recipe? Yum! Satisfying and rich in flavor without being too heavy.
